Compost: The Quiet Hero educates on THE WHY and THE HOW of organics collection programs within the
foodservice industry. The Quiet Hero made his debut at the National Restaurant Association 2010 Show in a 90
minute solo presentation by his spokesperson, Holly Elmore.

The foodservice industry is the second largest private enterprise industry in the nation. In addition to
restaurants, hotels, conference centers and catering, the foodservice industry extends into prepared food at
retail groceries and institutional operations including corporate headquarter campuses, colleges and hospitals.

THE WHY:

According to U.S. EPA research, 2.5% of discarded organics are diverted from landfills to higher good purposes.
The remaining estimated 31 million tons generated each year in the United States is hauled to landfills, with a
Green House Gas impact the equivalent of taking 5.1 million cars off the road. The Quiet Hero educates WHY
foodservice operators must mobilize to divert the organics, now considered garbage, to composting or waste
to energy operations where they serve as an asset to create energy and/or compost.

THE HOW:

Showcasing the challenges and successes of the foodservice industry, the Quiet Hero educates on how an
organics collection program may be implemented with ease into daily operations. In most instances, the
program is cost neutral to cost savings.

The HOW & the WHY may be separate or combined speaking engagements. Also, either may be incorporated
